1. The difference of varieties

2. Appearance difference
The shape of black sesame is flat and slightly oval, large above and small below, with edges, the skin is slightly thick, dull, and there is oil squeezed with fingers. The shape and size of white sesame and black sesame are similar, the skin of white sesame is slightly thinner, the surface is shiny, and the seeds are fuller than black sesame. This is the difference in their appearance.
3. Difference of use
Black sesame is mainly used for making pastries or as food accessories. Because of its high oil content, white sesame is mainly used for oil extraction and is the main source of raw materials for sesame oil.
4. Taste difference
Black sesame after fried taste crispy, sesame flavor is rich. After the fried white sesame, although the taste is also crispy, but the sesame flavor is slightly light, not rich black sesame. That's the difference in taste.
5. Nutritional differences
White sesame contains protein, dietary fiber, sugar, vitamin A, vitamin E, calcium, iron, potassium, magnesium, fatty acids, lecithin, linoleic acid and other substances. Black sesame not only contains the above substances, but also some nutrients are higher than white sesame.
Vitamin E content of black sesame was 50.4 mg /100 g, and vitamin E38.28 mg /100 g of white sesame; The potassium content of black sesame was 358 mg /100 g, and that of white sesame was 266 mg /100 g. The selenium content of black sesame seeds is 4.7 micrograms, and that of white sesame seeds is 4.06 micrograms. It can be seen that the vitamin E, potassium and selenium of black sesame are higher than that of white sesame. This is the difference in their nutritional content.
